Craving a Get Away

I don't know what it is, but recently I've been dying for a vacay. My husband and I are going to a family lake house in Minnesota in a few weeks, so hopefully this will scratch my itch! In the meantime, here are some yummy pictures of places I'm dreaming of going..

Easy Cheesy Enchiladas

Hey there! Today I'm going to share one of my very favorite recipes with you. My Dad taught me how to make these a while ago... and they are hands down my husband's favorite meal. Better yet, they are super easy to make!


Here's what you need...



-8 oz of shredded cheese
-1/2 cup of diced jalapenos (more or less depending on how spicy you want them)
-8 medium sized flour tortillas (I use low fat)
-28 oz can of green enchilada sauce
-Vegetable or canola oil
-9 x 13 baking dish

(Don't preheat your oven right away, otherwise it will ready before you need it)

Directions:

- Heat 1 tsp of oil in a frying pan over medium heat.
- Heat both sides of a tortilla in the oil until it gets golden, set aside.
- Repeat this process (Step 1 and 2) for all tortillas.
*Use tongs, the tortilla can get really hot!




-Now, preheat your oven to 350.
-Mix your cheese and jalapenos together in a bowl
-Add 1/3 of a cup of your cheese/jalapeno mixture to each tortilla.
-Roll your tortilla, and place seam down in a baking dish (size of dish really doesn't matter)
-Repeat for all tortillas, once bottom of dish is full, add tortillas on the top
- Add enchilada sauce, sprinkle any leftover cheese on top
-Bake for 30 mins, or until sauce bubbles








ENJOY! My husband is a huge meat-eater, but like I said, this is his favorite meal. And if you're sensitive to spicy food, don't worry, the green sauce is really really mild (even though it says medium). Omit some jalapenos if you need to.

Loving Lilly!

Happy Wednesday!

A few days ago, I posted that I stopped by my favorite Lilly Pulitzer store, Pink Magnolia! Here's what I picked up...



1. A new planner!!! I cannot explain how excited I am to start using this bad boy in August! (Is it bad that I still have a Lilly planner that doesn't end until Dec? Nah...)

Confession: I am addicted to my planner. Pretty much my whole life is in there... I would have an anxiety attack if I lost it!

2. Marigold Skort in Let's Cha Cha. SO bright and fun... perfect for summer. And I got it on sale :) You can buy it online here.

3. A fun magnet! Better believe this baby is going straight on the fridge! Its the little things :)


I bought a Groupon a few days ago to a fitness studio that teaches zumba, pilates and yoga... so I'm off to take my first zumba class! Wish me luck!

A Tale of Two BBs...

I am constantly trying out new make-up and the trend of BB cream was no exception! From what I had heard and read, I was expecting a face lotion type consistency + some coverage + an SPF. I bought a drugstore brand, Garnier, for $13.00 and a department store brand, Estee Lauder, for $39.00. Here is what I found...


1: Garnier BB Cream - Oil free- SPF 20
- My first impression was that it was very runny and the color seemed darker and more orange than my skin tone. Honestly, I was a little scared!
-Because it was thinner in consistency than my usual lotion, it went further and I used less.
-It blended well into my skin, and didn't look as orange or dark as I thought it would. (I wasn't super tan when I first tried it, so I put some Bare Minerals powder on top.)
-It lasted all day and I had many compliments that my skin looked clear and 'glowy'.

Overall, a great buy for not a lot of cost!


2: Estée Lauder Day Wear BB- SPF 35
- My first impression was that it was quite thick, and it smelled nice.
- Because it was a thick consistency, it felt really heavy on my skin and took some effort to blend
- It matched my skin tone perfectly, which I was thankful for because I wasn't going to put powder on top or it would've felt even heavier!
- Halfway through the day I reapplied to get more coverage on my T zone

Overall, the product was pretty good.. but not as good as the Garnier. Higher cost does not mean better product!


What has your experience been with BB cream? What brand do you prefer? The new thing is "CC Cream"... I will have to try that next!

Smooth Sailing

You know what I love... Smoothies! They are the perfect summer breakfast... not to mention healthy and delicious! And I love that you can change it up based on whatever ingredients you happen to have at home.

I've gotten into the habit of working out first thing in the morning, then coming home to whip up a smoothie for breakfast. If I get my timing right I enjoy my smoothie while I watch Kathie Lee and Hoda.. love them!

Anywho, here is how I make my smoothies.

Ingredients:
- 1 cup frozen fruit (I used blueberries, strawberries and raspberries)
- 4-6 oz of any flavor yogurt (I had 4 oz of Trader Joe's banana yogurt on hand)
- 1 handful of spinach
- 1 cup of orange juice
- 1 Tbsp flax seed


Blend all ingredients together in blender until lumps of fruit and spinach leaves are no longer visible. 



Now, you might be thinking "SPINACH in a smoothie?"... because thats what I first thought. But in reality, you cannot even taste it (I pinky swear!!). Its an easy way to get another serving of veggies into your diet.

Weekend Recap

Whew, what a weekend!! It was so much fun, but I am pooped! My husband, his family, my friend Jess, her boyfriend Logan, and I had an awesome time at the lake! We swam, boated, tubed, jetskied, skied, baked, and shopped!

Probably the funniest thing was trying to make this dessert on Friday night... it looks awful, but it actually tasted pretty good! I think it was supposed to somewhat like a strawberry shortcake... let's just say that I will NOT be putting the recipe on my blog :)

Friday Five: Lilly Edition

Hi lovelies! Today is the first day of summer, so you know what that means! It's National Wear Your Lilly Day!! In honor of this holiday, today's post is dedicated to all things Lilly.


1. It's a little too hot to wear this dress today, but I had to include it. This dress is PERFECT for teaching.. it is definitely a go-to outfit for me during the school year.



2. My fave Lilly koozie... sip in style!



3. Confession: I love to craft! So here are two of my Lilly crafts... the first is a quote made with Lilly wrapping paper, and the second is a work in progress. I mod-podged paper (from my Lilly planner) onto numbers... these will eventually go on a wreath for our front door.

 




4. Monogrammed Lilly binder covers... what could be more perfect?? :) I downloaded these from Jessica Marie Design.

 
 


5. And lastly, this Lilly skirt. I've had this skirt for a long time, but it's still a favorite!

Things I'm Loving....


Hey there! Here are some things I'm currently loving...

-This adorable gold cross necklace. It's made by Gorjana, but I bought it from Rue La La. I thought it was going to be bigger based on the picture online,  but I actually like that its small and dainty!





-My monthly Birchbox! Got this one in the mail yesterday. I love getting it every month- its always packed with fun goodies. This month my box had nail polish, a full sized lip crayon, a sample of face lotion, a sample of perfume, mini nail files and some cute post cards! I can't wait to try these out! 


 



-Shock Top's Lemon Shandy. I'm not a big drinker, but this beer is SO good! Its so lemon-y and refreshing- tastes like summer in a bottle!
